4 c. sweet potato ribbons (or your favorite veggie) You can buy these already prepared in the produce section.
4 handfuls of spinach
Thai Peanut Sauce
1/2 c. peanut butter (unsalted, all natural)
2 Tbsp. coconut aminos or low sodium soy sauce
2 Tbsp. rice vinegar
1/2 tsp. garlic powder
1 Tbsp. grated fresh ginger
1 tsp. siracha
1/2 tsp. maple syrup
1/3 c. water
Whisk all ingredients together
In a sauté pan add sweet potato ribbons and spinach heat til spinach starts to wilt. add peanut sauce heat through and serve.
This makes enough dressing for a another quick meal...Put on sautéed veggies, rice etc. it's delicious!!!
