3 Celery stalks
3 Cloves of garlic
2 c. cherry tomatoes or you could use a 14oz can of diced tomatoes
1 c. white navy, butter or lima beans
6 c. veggies (choose from the list below)
4 c. vegetable stock
2 c. water
1 tsp.dried parsley
Himalayan sea salt and pepper
2 big handfuls of fresh spinach
Sautee onions, carrots, celery and garlic (add a dash of Himalayan sea salt) 3-5 min. until it starts to soften. Meanwhile add the cherry tomatoes, Himalayan sea salt, pepper and parsley to a food processor, puree. Add in all the remaining ingredients except spinach.
Bring to a boil, then simmer 20 minutes. Add in Spinach and serve. Enjoy!
